I have been CRAVING bacon and keep getting lame replicas. I went to McDs and got a biscuit thinking that would solve my craving. The bacon was translucent. It was thinner than paper. WTHeck?

So I decided to make carbonara for my DH. Now this in itself is a challenge. He likes bacon, but not IN his food. Ay yi yi. Whatever, I'm not to be disuaded.

Here is my 'recipe'

boil 1/3 box of mini-linguine in salted water.

cook the bacon crispy (about 8-12 slices - to your taste), drain and pat the excess oil off. Chop finely.
Pour off most of the oil in the pan, and saute about 1/2 -3/4 small onion, finely diced.

thoroughly wisk 3 fresh eggs, 3/4 c heavy cream, 2-3 T fresh parmesan (I dont like a lot of cheese, most people would probably put in 1/3 of a cup or more) and about 1/2 t salt.

When the noodles are done, I like to rinse off the starchiness, so I rinse, re-boiled hot water (ok, so I really didnt, I just turned the faucet to 'extra-scalding' and rinsed in that). Then put them in the hot, re-boiled water. Its really important that the noodles are uber-hot.

Then I tossed the drained noodles in the onion pan and heat it for a few minutes, tossing in the onions and bacon. Turn off the heat, pour in the liquid, toss immediately. Transfer to bowl, sprinkle with more parmesan, serve immediately.

It was YUMMM-MEEEE

Sounds really yummy and not too complicated either. Will have to give that a go one time ... and maybe again if it works out like yours. :wink3:

ooo...that's something I have to try!!

I'm a pasta junkie, just two days ago I made one of our favorite one: garlic, capers, truffle salt and parmesan. You can add spinach, pine nuts, little bit of cream or white wine......( I also threw in some scallops and shrimp dry-sauteed separately this time)
ANY combination of these guarantees heavenly taste!!!!!

YUM, I love capers. I never cook with it. I may have to play around. :)

guess what was for dinner tonight??

I was finally able to do the full version, twice I did it without the bacon because someone ate it before I did it!!
I used fresh pasta, not the dried kind - I always do when using the cream...

heaven!!!

That's funny. I have been on such a bacon kick lately. Shame on them for stealing yours!

Thats such a good idea... I haven't used fresh pasta in ages. hmmm, you may have inspired me.
