View Full Version : Crockpot (slow cooker) salsa chicken :)

I feel slightly odd posting this because a lot of the recipes here seem super fancy and, well, just better, lol. But this is a standby at our house, and it is easy. I love to make this on one of our busy days full of extracurricular activities and things.

I got the recipe from a sweet friend on sewing mamas (another forum I frequent) a while back. Copied from her original post of the recipe:

"Crock-Pot Taco Chicken
2-3 frozen boneless, skinless chicken breasts
2 cans Rotel tomatoes (I use the milder ones-you can even just use plain diced tomatoes)
1 pkg. taco seasoning
2 cans kidney beans, drained and rinsed

In a Crock-pot, add all ingredients and cook on high 4-5 hours or low 8-10 hours. At that point, take the lid off the crock-pot. Turn it up to high, let it cook for 30 minutes to 1 hour, stirring frequently. This will help it to be less soupy. Shred the chicken with two forks. Serve over tortilla chips or in taco shells with all the fixings: cheese, lettuce, tomatoes, black olives, sour cream, salsa, etc."

I like to serve this as she suggests or over rice or over noodles or on a hoagie roll as a sandwich. seriously yummy. I probably make this once or twice a month, but we have it different every time.

Forgot to add to it that I normally use black beans instead of the kidney, but either is good! I just love how it can be changed up too - you can put different seasoning packets in besides taco as well. :)

Ooh. I'm actually on the lookout for recipes that can be made in the crockpot, that don't use canned soup!!! thanks!!
