What's for dinner tonight!
-1 bag white tortilla chips (a big bag, but not a mongo one)
-'bout 3 cups freshly grated cheddar cheese (or a somewhat salty hard cheese)
-12 Kalamata (black) olives, pitted and cut in half
-1/2 yellow & 1/2 orange bell pepper, roasted under a broiler until spotted black, and flesh somewhat softened, cut into strips, then halved or thirded
-'bout 1/2 cup Trader Joe's Fat Free Black Bean Dip (or canned & rinsed black beans)
-'bout 1/2 cup frozen corn
-'bout 1/2 cup salsa
Preheat oven to 350F (180 C, 4, Moderate).
Spread a 1-chip deep layer (more or less--should be about 1/3rd of the bag) of nacho chips on the bottom of a roasting pan lined with aluminum foil. Dot with 1/2 of the olives, bean dip (or beans), salsa, peppers, & corn. Cover with 1 cup grated cheese. Cover with another layer of chips and the rest of the ingredients (keep one cup cheese). Use the last third of the chips to cover this, and the last of the cheese.
Bake 15 mn. Yum!
