Curried Chicken Salad - the best!!!

My goodness, you won't believe how yummy it was what I made for dinner tonight!!!!!!
(I felt like this thread needed a revival )


no exact amounts:
- cooked chicken (preferably breast meat, sautéed for example), I had just over a pound/ 1kg
- peeled and diced apple
- 1 small onion, sweet kind is better
- 1 tsp of honey
- some mayo, or mayo + white yoghurt, about 2 tbsp
- 1-2 tsp of curry powder (I like it more on the bitter side)
- I threw in dried cranberries, shortly microwaved with a bit of water to plump up
- little bit of lime or lemon juice
- salt, pepper, parsley to taste

BLISS!!!!!!!!!!!!!

If you like that recipe, then you'll probably like this one too! I'm a vegetarian now, but in the past I LOVED this curry-chicken pasta salad:

2 chicken breasts, skinless, boneless and cut thin once lengthwise and once depthwise
2 green onion stalks, cut into 1.5" pieces, and then into 4 lengthwise
1/2 box of medium shell pasta
handful of raisins
3/4 tsp curry powder, or more to taste
1/2 tsp turmeric
2 tbsp sugar
1 tbsp lime juice
1/2 cup mayonnaise
1/2 cup sour cream

Cook the shells until al dente. Drain and rinse with cold water. Meanwhile, cook the chicken in a skillet with a little bit of oil and salt. Add just enough curry to color the chicken. When chicken is almost done (maybe 2 minutes left, ) add the green onion and the raisins. Set aside.

In a medium bowl, mix the mayo, sour cream, sugar, lime juice, curry, turmeric. Whisk and add salt and more curry, sugar, lime juice to taste..(the recipes Ive seen call for a ton of sugar- but I found it WAY too much) 2 tbsp is just about right for me..but if you like it sweeter, add more. If you like it tangy, more lime juice..Whisk until homogenous and then mix the pasta and chicken mixtures with it. Toss to coat. Add the pasta some at a time to make sure there'll be enough dressing. Taste again and add more salt if necessary.

Chill in fridge and serve cold.
